Chewy Oat Spelt Cookies

I love anything oat based, I also love the taste of spelt flour. Luckily oat and spelt go really well together and make for a great sweet treat when combined properly.


  • 1 1/2 cup oats
  • 1 1/2 cup spelt flour
  • 1 cup hot water
  • 1/2 cup of dairy free butter or sunflower oil
  • 1 tsp baking powder
  • 1 tsp vanilla essence
  • 1 tbsp cinnamon (note: i ❤ cinnamon so you can use less if desired)
  • Optional extras: 2 tbsp honey, raisins, cinnamon, sugar and sunflower seeds

Preheat oven to 375 degrees. Grease a baking tray.

Combine oats, baking powder, vanilla essence water and oil/butter and stir.

Throw in your additional extras (as much/little) as you like.

Combine flour and  into mixture.

Spoon the dough onto the greased baking tray (try to make them flat, they turn out too moist if made too 3D). Mixture should yield

Pop in oven for 15 minutes.

Leave to cool.


Personally I like raisins, a higher oat to spelt ratio, 2 tbsp honey and 2 tsp cinnamon. They are very “healthy” tasting (as in not sweet) if made without any sweetners at all.


Lazy Girls Protein Chocoalte Hit

I sometimes just need chocolate, thats it. I just want chocolate! However, I am a big advocator  of protein (and ww carbs) being an essential in regulating mood and blood sugars. So I combine my chocolate craving with some protein to satisfy each craving. I call this 


  • 500g of chocolate of choice
  • 1 cup of toasted seeds
  • 2 tbsp goji berries (or chopped apricots/dates/figs/raisins)

Bring a pot of water to the boil.

Break up and melt chocolate in a bowl over the pot.

Toast the seeds (if you want) and add to melted chocoalte (along with the dried fruit)

Place the mixture onto a baking tray in the shap of “blobs”-make them whatever size you want depending on the level of chocolate hit you desire! and put in freezer for 15 minutes

TADA! Protein Chocolate Hit!


Pear N’ Banana Soft Serve

Homemade soft serve is a big “thing” in blog world, most creations based on a similar recipe base. My two cents is no different, only some small twists on it. Originally I wanted to try this recipe with just pears because shock horror, Im not a big banana fan. However, on my first attempt, after too much rice milk and a lot of blending, my consistency was getting nowhere. So I looked to the banana to save my mushy mess and save it it did!


  • 6 large slightly over ripe conference pears
  • Splash of Dairy Free Milk (i use Rice Milk-Almond works well too)
  • 6 bananas
  • 1 packet of vanilla flavoured protein powder
  • 4 tbsp coconut butter
  • (any additions you want, cinnamon, sweetner etc..)

Chop up and  Boil the pears in a pot of boiling water for 5 minutes

Drain water

Add a splash of Milk

Stir and add 4 tbsp of coconut butter

Using a masher, mash the pear mixture

Add packet of Protein Powder

Chop and add in bananas

Use an electric mixture to blend the mix

It will be quite chunky for a while and doesnt completly blend, but I like it that way (surprise banana and pear chunks!)

Transfer mix into a container and place in freezer for 2 1/2 hours

Depending on consistency desired you can eat it straight from the freezer or place it in the fridge to soften a little

I like to eat it with a little vanilla yoghurt or just straight up!
